שלום אני מעוניין לדעת איך אפשר לטפל בבשר הכתף בקר כדי שיהיה רך ועסיסי
כיוון שאני והחבר'ה בצבא אז הבשר הנגיש לנו זה רק חזה הודו(שאנחנו מכינים שיפודים מדהימים)
והבשר השני המאוד קורץ זה גושי הכתף בקר בעקרון אחרי ניסיון אחד (עם משרת טריאקי שום ודבש)
הבשר יצא מאוד טעים אבל הוא היה מאוד "גומי" הבעיה היא שגם כהבשר הוא "מדיום רר" הוא עדיין קשה
שמעתי על שיטה לרכך את הבשר על ידי השריית הקוביות של השיפודים במי סודה.
אם מישהו פה יכול להביא גם מתכונים די פשוטים כי אנחנו לוחמים וציוד מטבח אין יותר מדי וגם זמן להתעסק אין יותר מדי

איך גורמים לבשר שהיה קפוא "לקבל מחדש טעם" כמה שיותר טוב של בקר
האם רוטב טריאקי + דבש+ שום כתוש\בצל זה פתרון מספיק טוב?

אם אתה רוצה טעם של "בקר" אתה צריך לתת לו רוטב של ציר בקר. אם אתה רוצה לתת לו טעם טוב - תשתמש במרינדה הזו - בתוספת צ'ילי גרוס (או משהו כזה).
בכל מקרה, אל תחתוך לקוביות - תחתוך לרצועות נגד כיוון הסיבים של השריר, ותרביץ קצת לרצועות בשביל לרכך אותם. במרינדה עדיף לשים לפחות ל-24 שעות.

...ניתן להשיג מרכך בשר בצורת אבקה, המכיל פפאין, באגף התבלינים בכל סופר, ואם אצה לך הדרך, עשה כפי שהמליצו לך - פרוס את הבשר דק לרוחב הסיבים, תתעלל בו, ואז ההשרייה במרכך הבשר תהייה קצרה בהרבה.

מה המחיר שלו?
והאם השרייה של קוביות הבשר במי סודה מרככת אותו (שמעתי פעם את הטענה הזאת אבל אף פעם לא קיבלתי אימות לזה)

לרכך בשר אדום... לוקחים יין אדום
שישב קצת בכלי עם יין אדום יבש וטוב.

זה לפחות מה שאני נוהגת לעשות.


אמא שלי נוהגת לטגן את המעטפת של הכתף (שיסגר) ואז לבשל את זה כתבשיל כשהבסיס הוא "אבקת ציר בקר" של אוסם או משהו כזה... (כמו שמכינים מרק אינסטנט).

השרייה ביין היא סוג של מרינדה, ואין לה השפעה על רכות הבשר. השואל התכוון לכך שבעקבות הטיפול יוכל להכין בשר על האש במהירות, ולקבל בשר רך גם מחלק שהוא קשה ולעיס מטיבו.
עניין הבישול עם ציר בשר הוא בישול איטי וממושך שירכך כל בשר, אך, שוב, לא זו הייתה הכוונה.

ביין, פאפאיה ואפילו ביוגורט (לאלו שלא מקפידים על כשרות) ישנם חומרים המררכים בשר.

כמובן שסוג בשר שהוא קשה מטבעו (כלל אצבע אומר שככל שהחלק זז יותר, יש בו יותר שריר, הוא קשה יותר) אוהב יותר בישול ארוך ואיטי ולכן אני בספק אם יהיה ניתן להגיע לתוצאות משביעות רצון (וקיבה) בשימוש בבשר כתף לשיפודים.

כאן באוסטרליה נמכרים נתחי כתף פרוסים דק לאחר ריכוך מכני לטובת סטייקים (שיוצאים מעולה, אגב!) מעבר לכך, זה נתח שמשומש בהרבה מסעדות לשם טיגון קצר דווקא לאחר עיבוד.
